The coin and the die are the two workhorses of chance. They share the same honest core, yet they behave differently enough that picking the right one matters. Here is how they compare, and when to reach for each.
Both are fair, uniform, and memoryless. Every side has an equal chance, and every trial is independent of the last, so neither a coin nor a die is ever due for anything. Believing otherwise is the gambler's fallacy in both cases. The difference is not in how fair they are, but in how many outcomes they offer and what happens when you combine several.
A coin is the simplest possible randomizer, with exactly two outcomes at 50 percent each. In the language of probability it is a Bernoulli trial. A die is a discrete uniform choice among however many faces it has, so a six-sided die gives six outcomes at about 16.7 percent each. A coin answers yes-or-no questions. A die picks from a range.

This is where they part ways most clearly. Count the heads in several coin flips and you get a binomial distribution, a hump centered on half the flips. Add the faces of several dice and you get something different: a triangular or bell-shaped spread of totals. Two six-sided dice make a 7 six times as often as a 2, because there are more combinations that sum to 7. A single coin or a single die is flat and uniform. The moment you combine several, the middle totals dominate and the extremes become rare, an early glimpse of the central limit theorem.
